Is there a more Southern dish than grits?
“When ranking Southern foods, grits has to be among the top – if not the top,” says Greg Johnsman, owner of Geechie Boy Mill in Edisto Island, South Carolina. We’d be hard-pressed to disagree.
A stretch from Texas, through Georgia and the Carolinas, and up into Virginia is coined “The Grits Belt.” In 2002, Georgia named grits its official prepared food.
Grits are prepared by boiling coarsely ground hard dent corn kernels, and there is definitely an art to it. Check out the video above to hear Johnsman’s tips on how to cook up your own delicious bowl of grits.
