This Heartland Cook says she can’t even guess how many Coconut Cream Pies she’s made in her lifetime – but the number would be in the thousands. Thelma Blumenstock of DeSoto, Illinois says her pies have made it to tables all over southern Illinois and even into southeast Missouri. She says everyone always asks for her Coconut Cream Pie. After one bite, you’ll understand why.

It has a deliciously milk-chocolate-y filling that is not as rich as French silk, and is topped with meringue. It’s sure to satisfy your sweet tooth and clear out your left-over hot cocoa mix.

If you’re looking to celebrate National Pi day with something a little more savory, you need to try this. Karen Elledge of Jackson says her Chicken Salad Pie is always hit. Chock full of chicken, celery, almonds, and water chestnuts – this dish is full of flavor, but not so heavy that it’ll weigh you down. It’s a quick and easy fix for any busy cook, and Karen says it’s also a great way to re-purpose leftover chicken.
