Quick, easy and delicious!
It’s one of the most popular soups in the world and arguably one of the easiest to make: Egg Drop Soup. You can make this within 15 minutes and serve up to four people. Plus you can take the base recipe and make it your own by adding all sorts of extra ingredients. 5 INGREDIENT EGG DROP SOUP
2 green onions
4 c. chicken broth (we suggest low sodium)
1 Tbsp. cornstarch
2 tsp. soy sauce
Beat eggs together and set aside. Chop green onions. Bring chicken broth to a boil. Remove about ½ c. of broth and mix in cornstarch to create a slurry. Return slurry to boiling broth to help thicken the soup. While stirring, slowly add enough egg to your liking. While briskly stirring, add green onions and soy sauce. Boil for 5 minutes to cook egg. Serve!
½ c. corn
1 Tbsp. olive oil
½ c. chopped onions
½ c. chopped green pepper
Saute all ingredients in a small saucepan for 5 minutes. Add to soup at the very end and stir.
SPICY CHICKEN AND EGG DROP SOUP
1 lb. leftover chicken (fried or baked)
¼ c. Tabasco Sauce
1 Tbsp. paprika
Combine paprika and Tobasco sauce until well blended. Add and coat the chicken. Let rest for 5 minutes. Add to soup after adding the soy sauce. Cook for 5 minutes.
